Down to Earth Vegan Kitchen, a new plant-based Mexican cafe by Alma Rangel, opened on the University of Texas at Arlington campus. Known for her vegetarian food truck, Rangel now offers vegan favorites like Spicy Sweet Potato Tacos and Grilled Nopalitos Cactus Tacos. Feedback encourages menu expansion.

Dotty Woodson, a horticulturist dedicated to spreading enthusiasm for water conservation and gardening, retired after 30 years, including 24 with Texas A&M AgriLife Extension. Honored by public figures, she's known for her engaging talks, TV appearances, and plans to focus on orchids post-retirement.

Texas Christian University in Fort Worth offers Texas's first minor exploring human-animal relationships, directed by Dr. David Aftandilian. This interdisciplinary program investigates human superiority perceptions, animal roles in culture, and impacts on animals from various academic perspectives, fostering empathy and understanding through diverse coursework.
