Eastfield College to host free sustainability summit

Eastfield College will host the free annual DCCCD sustainability summit on November 8, featuring Ian Garrett, who will discuss creativity in sustainability. Attendees can explore five learning tracks, including Social Equity and Resource Efficiency, to address various sustainability challenges. Lunch is provided, pre-registration requested.

New vegan restaurant pops up in Plano

Viridescent Kitchen, a new vegan café in Plano, offers a plant-based, largely gluten-free menu. Founded by Laura Thornthwaite, Gabrielle Reyes, and Brooke Ali, it features dishes like Monster Nachos and Beyond Beef Figgy Burger. The restaurant prioritizes taste, environmental friendliness, and caters to dietary needs.
